Weekend mornings are the best, because it’s time for a laid-back breakfast. We love having something different than the usual during weekends.
My Sunday morning ritual is to wake up late (he wakes up early on weekends, really don’t know why, so just specifying, I wake up late), we read the weekend newspaper while enjoying tea and the morning breeze. For a change Mumbai did witness winter during November-December and there was cool breeze for some days.
While sipping my hot cuppa, I casually asked him, what for breakfast? I asked this because I know he already has something in mind which he is craving for and even if I suggest any dish, he convinces me to have what he has planned. So, to skip this and save my energy I let him decide the weekend breakfasts. One more advantage of this is, he is so excited to cook that he does everything while I sit back and eat.
This time, it was pancakes. I always thought they would not be easy to make and so never tried making them at home. It was the first time we were making them. I checked the recipe. There are many ingredients which we don’t have at home, I said. He showed me all the ingredients he did buy the previous evening, a smirk on his face. Oh, so he did plan this yesterday itself. Bongs will be bongs, they literally plan the next day’s meal a day before, I said. There was a big grin on his face.
We wore our aprons and were ready for some fun cooking. It was not at all time consuming and very easy to make. Follow the below recipe and you are good to go!
- 1 cup maida (sieve it), 1 spoon baking powder, 3-4 spoons powdered sugar, pinch of salt
- Mix them together
- Beat the egg, add it to the mixture
- Add around 1 table spoon melted butter
- Add 1 cup milk and mix well, mixture should not be runny
- Add 1-2 drop of vanilla essence
- Heat a non-stick pan. Put some oil on it and wipe it off with a tissue. Pour the batter with a ladle and let it spread on its own
- Cook one side. Once the bubbles start to show on the surface, turn it around to cook the other side. Make sure the flame is medium or low, to avoid burning
For extra deliciousness, we poured maple syrup on top and added some fruits to go with. Loved cooking this hearty breakfast, it was so yummmmm! We thoroughly enjoyed and were happy to add one more dish to our weekend basket. Now it is a regular in our kitchen.
