When the mood is to eat healthy, but you don’t want to compromise on the fish as well

Weekends are for experimenting with new recipes. As Friday approaches, I am already bored with the staple roti & sabji and start thinking of what exciting can be cooked in the next two days. Our search starts, browsing through videos till we find something interesting. Last Saturday, while I was enjoying my morning tea, reading newspaper, my husband said; I have found this recipe of Chimichurri sauce. I just looked up from the paper, big question mark on my face since I had no clue what chimichurri sauce is. He told me the recipe and its origin. Chimichurri or chimmichurri is an uncooked sauce used both in cooking and as a table condiment for grilled meat. It originated in Argentina and Uruguay, and comes in a green and a red version. It consists of finely chopped parsley, minced garlic, olive oil, oregano and red wine vinegar. The dominant flavors are parsley and garlic. It is widely used in Argentina and Uruguay.

I thought I saw a circle of wisdom around him, a gyani baba enlightening his shishya. Cool, let us make this Chimichuri, I kind of like the name, I said. Then it was my turn to give some gyan. I said, will make something of quinoa to go with it. Being a nutritionist, I had to live by it and tell how nutritious quinoa is. The circle of wisdom was around me now.

So, the dinner plan was almost ready. But we wanted something else to go with it, may be a protein to make it wholesome, so we ordered some fish.

The menu was finally ready. We made a list of all the raw ingredients we needed and went shopping. After almost an hour of shopping what we needed (and what we actually didn’t), we were back exhausted.

Had some refreshing nimbu paani to charge ourselves and we were ready for some fun cooking.

We both enjoy cooking together, with some music playing in the background, sometimes 90’s movie playlist, indi-pop songs etc. We discuss almost everything under the sun while cooking and having dinner. From silly jokes to serious discussions about our life goals, from spicy gossip to current issues, the topics are endless.

Our menu was: Quinoa salad, grilled fish with chimichurri sauce and some pan-fried potatoes to go with it.

We relished this wholesome dinner, enjoying each other’s company; making plans about Sunday breakfast! Because, its always good to plan your next meal.
